My favorite season is Summer, there's no denying it. I like the warmer temps, wearing skorts when I run and the seemingly everlasting daylight. But, I also like to make soups, hot dishes, bake and try new recipes. For those activities, the cooler Fall weather is best. This Taste of Home recipe that includes cream corn and butter caught my eye, I tried it and it was fantastic!
Empty Bowl is tomorrow, Tuesday, April 12. You can join forces to benefit Second Harvest Northern Lakes Food Bank with other Souper Heroes just by attending! Some of these Souper Heroes started months ago when adults and children in our community started putting time and talent into making the bowls.
I was reading a poll taken by the National Restaurant Association and they said that more people will be eating at home this year. That made me think I best dig out some recipes and start sharing. Most of mine are quick and easy because I don't have time or talent to make anything hard. But, they are tried and true and my family likes them so I hope yours does too!
It was a great way to spend a chilly Saturday night, eating delicious chili and soups from area culinary artists. Even better, the money raised was going to the Epilepsy Foundation of MN and St. Jude Children’s Research Hospital.
My mom use to make a soup that was just potatoes and onion in a chicken based broth. I LOVED it, but of course I never watched her make it and she didn't write the recipe down. When she passed I thought it was gone forever, but after some searching and tweaking of the recipe I did find. I've nailed it exactly! It's easy, cheap and tasty!
Soup is one of my favorite foods. Broth, creamed, chicken, beef, all veggies, doesn't matter, I'm a fan. So, I'm looking forward to the upcoming inaugural event Winter Warm Up Soup & Chili Cook-off, a fundraiser for the Epilepsy Foundation of MN and St. Jude Children's Research Hospital at Superior Shores Resort in Two Harbors. Top chefs will be competing for trophies.

I always look forward to the Empty Bowl Event! While I know it's designed to help fund the Second Harvest Northern Lakes Food Bank, I can't help but feel that Spring is that much closer to reality. I also always enjoy adding another "Empty Bowl" pottery piece to my collection and the soup at the event is unique and delicious. They are already preparing for The Empty Bowl Event 2015!

First, I must say that I love the Cream of Chicken Cup of Soup. However, this has perplexed me for some time and I finally decided to bring it to your attention. They named it CUP of Soup indicating that once I make the product according to the directions given, I should have a scalding cup of deliciousness to enjoy. However, that is NOT the case!
I don't know if this is worthy of calling it an accomplishment or not, but I am the first soup customer of the Central Entrance Subway restaurant of this season. (Ok it's not an accomplishment.) And yes, I was extremely excited when I saw they had the soup out today. What an exciting life I lead.
