My mom use to make a soup that was just potatoes and onion in a chicken based broth.  I LOVED it, but of course I never watched her make it and she didn't write the recipe down.  When she passed I thought it was gone forever, but after some searching and tweaking of the recipe I did find.  I've nailed it exactly!  It's easy, cheap and tasty!

We use to get an abundance of potatoes and onions from a friend with a garden and needed to use them up.  But how when it was just me and my mom?  Potato Onion Soup!  It also came in handy when she hadn't taken anything out of the freezer for dinner.  The trick is mashing the potatoes up after their cooked and just before serving!  PLEASE let me know what you think if you try it, ok?

POTATO & ONION SOUP (JUST LIKE MOM USE TO MAKE)

What you need:

  • 1 big onion, sliced thin
  • 1/2 stick of butter
  • 3-4 medium sized potatoes, sliced thin
  • 3.5 Cups of water
  • 4 t. chicken bullion powder or granules
  • salt and pepper to taste

Make it:

Peel and rinse the potatoes, then cut them in thin slices.  Melt the butter (I actually use a whole stick) in a 3 quart pot.  Fry the thinly sliced onion in the melted butter on medium until soft. (I put a few sprinkles of garlic powder in with the onions).

Turn up the heat, add the potatoes, water and bullion, stirring until it boils.

Turn down the heat and allow the soup to simmer for about 15 minutes with a cover on.

Add salt and pepper to taste and use a potatoes masher to break up the potatoes and onions in the broth. (the pic above is BEFORE I used the potato masher).
