I have made cheese balls before but it always involved cream cheese mixed with ham or chives, not something sweet.  If you think about it, desserts that use the ingredients cream cheese and chocolate are delicious with a capital D, so why not a cheese ball?  Taste of Home has a super easy recipe that is sure to go fast, you might want to make two!

It's been rumored to taste just like chocolate chip cookie dough, HELLO!  This is perfect harmony to the salty on your holiday table.  It's an easy make-ahead recipe, you'll almost NOT want to share the recipe so they see how easy it is to prepare, but they'll beg for it!

What you need:

1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1/4 teaspoon vanilla extract
3/4 cup confectioners' sugar
2 tablespoons brown sugar
3/4 cup miniature semisweet chocolate chips (I use the mini chocolate chips)
3/4 cup finely chopped pecans
Graham crackers

Make it:

Using a large bowl, beat the cream cheese, butter and vanilla until fluffy. (it's easier if the cream cheese and butter are almost at room temperature).  Gradually add sugars; beat just until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours.  See?  Super easy!
Put the cream cheese mixture on a large piece of plastic wrap and shape into a ball. (I use cloves when I'm doing this so I don't get it under my fingernails and it's WAY more sanitary).  Refrigerate for at least 1 hour.

Just before serving, roll cheese ball in pecan and serve with graham crackers.

Yield: 1 cheese ball (about 2 cups).
