Go Healthy and Meatless with Eggplant Vegetable Pizzas
Ok, they aren't that pretty and my co-host Ken would NOT approve because there is no meat. But, after my husband's doctor said we should be eating more fruits and veggies, I thought I'd give it a shot. Although, the credit for this healthy alternative to pizza has to go to the makers of Ragu Pizza Sauce.
It's easy to make and only takes four ingredients. I had time to empty the dishwasher, fold towels and put away clothes while I was making them. Plus, if you've always wanted to try eggplant and have no idea how to cook it, this is a great "starter" recipe.
What you need:
- 1 large eggplant, washed with the ends cut off. Then cut it into slices about half an inch thick.
- olive oil
- pizza sauce (I used Ragu, any will do)
- shredded mozzarella cheese
- optional: garlic powder (I sprinkled some on before baking for added flavor)
Easy-to-Make:
Preheat the oven to 425. After washing and slicing your eggplant, brush both sides with olive oil and place on a cookie pan with edges (also known as a jelly roll pan).
Bake for 8 minutes, then turn them and bake for another 8 minutes or until eggplant is tender.
Remove from oven and spread pizza sauce (sorta thick) on each slice, then top with the shredded mozzarella cheese.
Bake for an additional 6 minutes or until cheese is melted.
We really liked it and since we ate healthy, we allowed ourselves a bowl of ice cream :)
