There is no meat more meant for grilling than the steak.  However, a good steak can be expensive.  If you want to get a thick rib eye it can cost $20 per steak at the grocery store.   Porterhouses are a great cut to grill and the t-bone is a classic, but those cost a pretty penny as well.   That's why I swear by the chuck eye cut.  It's half the price and tastes just as good as a rib eye.  Here's how to cook it right so it will melt in your mouth.

First off, you need to be using charcoal.  It gives it such a better taste.  I season my steaks with some garlic salt and pepper.  Nothing too fancy.  The meat has enough flavor in it, so you don't have to go overboard.

Next, sear it for 2 minutes on each side on the grill.  That locks the juices in.   Then close the vents on the grill and cover it so it will slow down the flame and cook it slow.

Now cook it to your liking, but don't ever cook it well done.  If it's well done, it's ruined.  Medium well is the max you should ever cook a steak.

You'll be surprised at how tender and flavorful the chuck eye is.  My friend Matt is a butcher, and he says that the chuck eye is the most underrated cut of beef.  The reason it tastes just about as good as a rib eye is because the chuck eye cuts start where the rib eye cuts end.

So in conclusion if you want a great steak to grill for a fraction of the price, chuck eye is your best bet.
