With the Bayfield Apple Festival approaching this weekend and the crisp cold weather many of us have turned our sights Fall cooking and baking.  There are many uses for the abundance of apples this year.  Pies, crisps, sauce, cakes and bars.  Why not buy a bushel instead of a peck and surprise the family with Taste of Home's Fluffy Carmel Apple Dip?

Of course anything with cream cheese, carmel and marshmallow creme HAS to be yummy, right?  Grab a cool crisp apple and tame the tart with the sweetness of this dip.  (NO double dipping!)  BONUS:  It's easy to make too!

What you need:

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup caramel ice cream topping
  • 1 teaspoon vanilla extract
  • 1 cup marshmallow creme
  • 3 medium tart apples
  • 2 tablespoons lemon juice
  • 2 tablespoons water

Make it:  (fast, everyone is waiting)

In a small bowl, beat the cream cheese, brown sugar, caramel topping and vanilla until smooth, then fold in marshmallow creme. Cut apples vertically into thin slices.

In a small bowl, combine lemon juice and water (to keep the apples from browning) toss apples in lemon juice mixture. Drain.

You can use just the slices of apples, but for a something a bit more fun, using Halloween cutters, cut out the center of each slice. Serve apple slices and cutouts with dip. Yield: 2 cups.
