Pedro’s Shares Update On New ‘Sabor By Pedro’s’ Duluth Restaurant
At the end of last year, we learned that the popular Cloquet Mexican food eatery Pedro's, which also has a location in Superior, would be coming to Duluth in 2026.
It was announced in December of last year that Pedro's would be taking over the space that had been occupied by Chilly Billy's and Madhouse Burgers in Duluth's Woodland neighborhood, with plans to create a new dining experience they described as "an extension of Pedro's" in the Twin Ports area.
According to the owners, this spinoff "extension of Pedro's" will feature brunch items and "fun Mexican dishes" at the heart of the menu.
When they announced plans to bring this Pedro's spinoff to Duluth, owners said they planned to open "sometime within the next two months," which would have been sometime in February.

I popped in to see how the progress was in mid-March, and some work had been done inside, but the signage on the outside was still for Madhouse Burgers, and no exterior work had been done to change the look of the place.
Now that it is May, hungry Pedro's fans are once again wondering about the status of the eatery. Conveniently, they just shared an update today!
While the exterior still looks the same as it has since becoming Madhouse Burgers, the team at Sabor by Pedro's shared on social media that they're getting ready to open soon!
They apologized for the longer-than-expected wait, explaining they "had some hiccups and lots of bumps along this road during this process of opening the restaurant". They have since "smoothed out" those bumps and say they are ready to open "very soon".

While they still don't have an official opening date, they did show off a couple of interior photos of the space and a note that they are hiring for all positions at the new restaurant, with a plan to hold a hiring open house from noon to 5 pm from Thursday, May 7, through Saturday, May 9.
The space does look pretty nice, doesn't it?
Once they hire the team to staff the restaurant, the countdown is on to the first time we'll be able to eat at the new Sabor by Pedro's in Woodland!
