
Minnesota DJ Uses Simple Trick To Make The Best Zucchini Lasagna Ever
If you love lasagna, I just stumbled across the best lasagna recipe ever, and you're not going to believe the star of the show.
Zucchini.
IS IT REALLY THAT GOOD?
If you ever tried replacing regular lasagna noodles with zucchini noodles, the taste is awesome, but because zucchini has a lot of water in it, it can be a little bit on the watery side.
Not with this recipe! I discovered a secret that will put the fear of watery lasagna aside forever.

INGREDIENTS
What you will need:
- 2-3 medium-sized sliced zucchini
- 1 jar of spaghetti sauce
- 1 8-ounce container of whipped cream cheese
- 1 egg
- salt, pepper, garlic salt to taste
- 1 cup mozzarella
- 1 cup 3-cheese blend
- (Save a secondary cup of cheese to cover the top)
- Non-stick spray

DIRECTIONS
Spray an 8x8 baking dish with non-stick spray, and heat the oven to 350 degrees.
Clean two to three zucchinis and slice them into long 1/8 to 1/4 inch thick slices. Lay them out on a cookie sheet or wax paper sprayed with no-stick spray.
IMPORTANT STEP
Sprinkle each piece with salt or sea salt and set timer for 5 minutes.
While zucchini sits, take ground beef and brown. Add finely chopped green peppers. (I added about half a cup). Then add salt, pepper, and garlic salt.
PREPARE THE ZUCCHINI
Go back to your zucchini. Dab each slice with a kitchen towel or a paper towel to remove water. Then place zucchini slices in the oven for about 10 minutes.
Next, grab a bowl and mix 8 ounces of whipped cream cheese with one egg. Then mix in one cup of shredded mozzarella cheese and one cup of a three cheese blend. Stir it all together, and then set aside.
ASSEMBLY
Once you remove the zucchini from the oven, it's time to assemble the lasagna.
1. Place a very thin layer of spaghetti sauce on the bottom of your pan. 2. Cover with a light sprinkling of hamburger.
3. Cover with cheese mixture.
4. Place your zucchini slices slightly overlapping or right next to each other to cover the cheese mixture.
5. Repeat the process. Add sauce, hamburger, chees mixture, and zucchini noodles.
6. The top layer should be just a little bit of sauce, the remainder of hamburger, and cover with shredded mozzarella.
7. Spray a sheet of aluminum foil with nonstick spray and cover the dish with foil.
BAKE TIME
Bake the lasagna for 30 minutes. Once it's done, remove from the oven; set aside for a few minutes, and serve when ready.
I served this with toasted, buttered garlic-dusted hamburger buns. (They make a great garlic bread! Soft on the inside and just a little toasty crunch on the outside.)
SERVE IT UP
I waited about an hour for it to all settle, and it turned out perfectly! The lasagna had no watery finish. It was just creamy and delicious.
All of my boys, as well as Darin (my boyfriend), gave me a thumbs up and said I definitely needed to remember this recipe.
