I had never tried Gnocchi before and when I purchased it, I wasn't sure if I'd be a fan.  But, it's delicious!  I made this Taste of Home Soup for dinner last night and it was easy, quick and tasty!  My husband said it should go in the "make it again" pile of recipes I have.  He isn't a pesto fan, so I omitted the dollop on the top, but I'll include it and let you make a decision based on your family's taste.Note:  I found Gnocchi in the pasta section of the grocery store.  I also made this easier by using my frozen pre-grilled chicken, just microwave, cut it up and throw it in.  The flavor is tremendous!  Be sure to scroll down and get details on B105's Taste of Home Cooking School coming in October!!!

 

INGREDIENTS

•1 jar (15 ounces) roasted garlic Alfredo sauce

•2 cups water

•2 cups cubed rotisserie chicken

•1 teaspoon Italian seasoning

•1/4 teaspoon salt

•1/4 teaspoon pepper

•1 package (16 ounces) potato gnocchi

•3 cups coarsley chopped fresh spinach

•4 teaspoons prepared pesto

DIRECTIONS

•In a large saucepan, combine the first six ingredients; bring to a gentle boil, stirring occasionally. Stir in gnocchi and spinach; cook 3-8 minutes or until gnocchi float. Top each serving with pesto. Yield: 4 servings.
