Most of us have made breakfast in bed for mom or dad as a way to celebrate "their" day.  That either means they get a bowl of cereal with outdated milk and a spoon the dog licked or an elaborate breakfast with the help of an adult, pancakes or french toast.  But, here's a recipe from Taste of Home that looks extravagant and is so super simple.  Watch mom's jaw drop when the kids walk in with THIS on the plate!

Like I said, it's simple, but the kids will need supervision.  You don't want any egg shells to sneak into the cups and you'll have to use the oven.  But, it will be a great learning experience, you'll be able to spend time with the kids and they will be so PROUD!  Plus, you don't need a lot of ingredients!

What you need:

  • 12 thin slices deli roast beef
  • 6 slices process American cheese, quartered
  • 12 Eggland's Best Eggs

Make it:

Grease a muffin tin and place a slice of beef onto the bottom and up the sides of each of the cups, forming a shell. Arrange two cheese pieces in each shell and carefully break one egg into each cup.

Then, just bake, uncovered, at 350° for 20-25 minutes or until eggs are completely set. Yield: 6 servings (2 each).

Have the kids make toast while it's baking and serve that on the side!
