If you've always been one to be a little different, one to go against the normal grain, then do I have a Taste of Home recipe for you!  Instead of buffalo flavored wings at your Super Sunday party, make buffalo flavored meatballs!

There's lots of choices when it comes to the appetizers you plan to serve at your Super Sunday party.  According to the National Chicken Council, Americans are expected to eat an amazing 1.25 BILLION chicken wings during the big game.  Surprise your guests with something a little different this year.  Best part?  You can make it ahead of time so you can actually sit and watch some of the game with your guests.  Let's get you outta the kitchen earlier!

INGREDIENTS

  • 3/4 cup panko (Japanese) bread crumbs
  • 1/3 cup plus 1/2 cup Louisiana-style hot sauce, divided
  • 1/4 cup chopped celery
  • 1 egg white
  • 1 pound lean ground chicken
  • Reduced-fat blue cheese or ranch salad dressing, optional

MAKE IT

Preheat oven to 400°. Combine bread crumbs, 1/3 cup hot sauce, celery and egg white. Add chicken; mix lightly but thoroughly.

Shape into twenty-four 1-in. balls. (use a melon baller is you have trouble getting them the same shape).  Bake them on a greased rack in a shallow baking pan for 20-25 minutes or until cooked through.  Let rest for a few minutes before you toss the them with remaining hot sauce. If desired, drizzle with salad dressing just before serving or offer a small dish for dipping!  Yield: 2 dozen.
