Even if you aren't planning a Cinco de Mayo party at your house, you can "spice" up the day to celebrate by serving Taste of Home's Beef and Bean Chimichangas!  Why serve just chips and salsa when you can WOW the family with this easy recipe.  Of course, ask for help with dishes after the meal BEFORE you serve it.  You know they'll want to siesta after filling up on this delicious meal!

 

WHAT YOU'LL NEED TO FEED:

  • 1-1/2 pounds ground beef
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 garlic clove, minced
  • 2 cans (16 ounces each) refried beans
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup taco sauce
  • 16 flour tortillas (10 inches)
  • Vegetable oil

Toppings of your choice: shredded lettuce, sour cream, chopped ripe olives, chopped tomatoes, additional cheddar cheese

MAKE IT:

Using a large skillet, cook the beef, onion, green pepper and garlic together over medium heat until the meat is no longer pink; drain. Add the beans, cheese and taco sauce. Continue to cook, stirring until cheese is melted.  Should take about 5 minutes. Remove from the heat. Then, spoon about 1/3 cup to one side of each tortilla. Fold up edge nearest filling, then fold in both sides and roll up. Secure with a toothpick or it will unfold. In a large skillet, fry tortillas with the folded side down, in oil for 2-3 minutes or until lightly browned. Turn and cook the other side. ( The filling is fully cooked, so you only need to brown and crisp up the tortilla).  Drain on paper towels. Then, serve with toppings of your choice. Yield: 16 chimichangas. (depending on how much filling you put in each).
